I am not a big fan of souffle. It's too much like eating air and they deflate so fast after they come out from the oven that you don't have a chance to savour the flavour. But I love to see them rise in the oven.
I found this recipe online and decided to give it a try at home. Despite the fact that everyone Ooohs and Ahhhs when they see a souffle, they are actually very easy to make. It's just eggs and sugar with a bit of flavourings. For this time I put lemon rind and a bit of lemon juice in it.
