It's always fun to be asked to create something extraordinary. It was really a surprise when I got commissioned to make E&R's wedding cake in coffee lemon flavour. I was afraid that nobody will enjoy the cake because of the unique flavour combo but surprisingly it was really good. It was a brown sugar coffee cake with lemon swiss meringue buttercream. The 4 tier cake was covered with white buttercream flavoured fondant, decorated with hand crafted peonies and hand painted silver highlights.

Pillow Cake
How should a bridal cake look like? This special bride had specifically asked for a cake to go with the restaurant that she was going to celebrate at with her close girlfriends. This cake is vanilla cake with chestnut buttercream, with colours to match the wedding.

What is Your Style?
I have finally completed the final class of cake decorating at George Brown College. It's been another 10 fun class of sugary art.
For the final project, I would like to make something that can represent my style. So, what's my style? Being a Gemini and born in the year of Monkey, picking a favourite has always been a challenge for me. That's why it has been a struggle for me when I had to design my final project.
Having studied in architecture, I like things structured and adore bold patterns and geometry. I like all things colourful, whimsical and edgy. I also like one of the kind and make things that gives you a "how did you do that?" moment. With all different possibilities, it's hard to make decisions.
After weeks of thinking with inspiration from bridal fashion and jewelery, this is the end result. I especially like the hollow sphere cake topper. Small strips of gum paste were hand cut, rolled, dried, and adhere together with royal icing. The two hearts were hand painted with edible silver. It's truly a work of art. Hope you like it too!

Haute Couture
Earlier this week I took a 3 day cake decorating course at Icing Inspirations with James Rosselle and Marina Sousa. It was so much fun! I was a bit intimated when everybody introduced themselves and they are all professionals. It turns out that James and Marina explained each steps very clearly and they were always there to help. The 3 days were intense and exhausting but I made new friends and enjoyed every minute of it. (Okay, maybe not so much when there are so many flower petals to make. They look great awesome though!) I think I should let the photos speak for themselves.

No Cutting Corners
Ever ask why wedding cakes cost so much?
"Can you do a wedding cake for 120 people for less than $400?"
No. It's scary how much work is involved in making the simplest wedding cake.
Here's the list of tools involved in this cake:
Stand mixer, whisk, cake paddle, double boiler, 2 pallet knifes, spatula, scale, hand blender, sieve, plastic scraper, numerous bowls and containers, 4 paint brushes, pins, rolling pin, cake rings, rose flower cutters, hydrangea cutters, flower formers, foil, ball tool, parchment paper, wax paper, pliers, wire cutter, hammer (yes a heavy duty hammer!). I think I have got them all. Wedding cakes are works of art that involves long hours and tremendous efforts.
Here's my first take on a wedding cake for a newly wed couple this weekend, a lemony sponge cake with fresh raspberry white chocolate ganache, marshmallow fondant and hand crafted sugar flowers. I am very happy with the result and enjoyed every moment making it.
Now who is doing the clean up?
