Chocolate Cream Tart

It's almost Valentine's day! And what is a valentine's day without chocolate?

This chocolate tart is the simplest thing to make: simple pie dough, chocolate ganache and fresh whipped cream with a hint of sugar.

Pie dough: I just used some flaky pie dough that I was practice making on the weekend, molded and blind baked them in a 400 degree oven.

Chocolate ganache: I tried an unconventional method to make it in the microwave. Take 1 to 1 ratio of fresh 35% cream and semi sweet chocolate, heat up the cream in the microwave (make sure to do it in moderate heat and watch it through the process. Do not overheat or else you there will be a lot of clean up to do!). Slightly melt the chocolate in the microwave and add it to the warm cream. Whisk until smooth and cool down in a cold water bath before adding to the baked pie shell.

Whip and pipe cold fresh cream with icing sugar and serve.
